Spongy Cupcakes

I made this cupcakes in the afternoon and it tasted not bad so was thinking to share the recipe with you guys! ^^ This recipe was sent by my cousin's wife and it is in Chinese so I tried my best to translate haha! XD Finally found something to do at home so I won't feel so bored. I really enjoy baking nowadays! =) Here it is, the recipe.

THINGS NEEDDED:

  1. 3 eggs

  2. 95 grams of caster suger

  3. 105 grams of self-raising flour

  4. 22 grams of corn oil

  5. 22 grams of milk

METHODS:

  1. Place nine cupcake liners in the tray.

  2. Preheat the oven to 170ºc

  3. Add one egg and 1/3 of sugar then contiune adding the egg and sugar. Beat until it's fluffy.

  4. Add the flour in slowly. (BEST: one tablespoon at a time)

  5. Add the corn oil and the milk in.

  6. Beat till it is thick enough.

  7. Fill the cupcake liners till it's 80% full.

  8. Bake for 25 minutes or until you poke with a toothpick and it comes out clean.
